Chef Pat Newton’s Grandpa’s Stash-io Biscotti Recipe

 In the voice of DJ Khaled … ANOTHER ONE! This time, we’ve got a sweet, tasty, infused recipe from Chef Pat Newton. Introducing Grandpa’s Stash-io Biscotti, featuring our beloved Thumbs Up brand Grandpa’s Stash of course. This one comes in a big bag of 7g bud and is a treat for anyone who loves an old-school strain – a cross of super skunk, OG kush and Afghan kush. Any Grandpa’s Stash you don’t use up here, we highly recommend hitting it with a bong.

Ingredients 

1-1/4 cup de-shelled pistachios

2-1/4 cup flour

1/2 cup brown sugar

1/2  cup fine organic sugar

1/2 tsp salt

1-1/2 tsp baking powder

3 large eggs

3/4 cup olive oil

6 grams cannabis

1 tbsp pure vanilla extract

1/2 lemon zest 

1 cup semi sweet dark chocolate 

STEPS: 

  1. In a small sauce pot add decarbed cannabis, 1/4 cup crushed pistachios and olive oil. Simmer on low for 1 hour. Staring through cheesecloth into a small bowl. Let oil cool, save cheese cloth bundle. 

  2. Pre-heat the oven to 325 degrees Fahrenheit. Spread pistachios out on a baking tray and toast for 10 mins. Let cool give them a rough chop, set aside. 

  3. In a large bowl add eggs, olive oil, vanilla & lemon zest, whisk till frothy. Sift in dry ingredients and fold gently. 

  4. Line a baking tray with silicone mat or wax paper. Form two logs side by side with batter. Shape with hands. Bake for 30 mins. 

  5. Remove and let cool for 10 minutes. Carefully transfer logs to a cutting board. Cut 1’ thick slices. Return slices to baking tray, bake for 15 mins or till golden brown. Let cool. 

  6. Melt chocolate in a bowl. Dip biscotti to coat. Crumble cannabis and pistachios from cheesecloth bundle to garnish. Stash in the fridge & enjoy as needed. Preferably in a rocking chair.
